I’m not a huge fan of mangoes, but the hubby, he loves mango salsa. So when we got some mangoes in our Bountiful Basket, I was pretty sure they’d end up in salsa form. Then I dropped them and they got a bit bruised. Oops. This salsa doesn’t care if the mangoes are little beat up, and was super easy and is hubby-approved.
The hardest part will be to peel and cut up the mangoes, but I’ve learned a little trick. Cut your mango in half and pull it off the seed. Then score the flesh of the mango into cubes, careful not to cut all the way through. Finally, slide your knife between the peel and the flesh. Beautifully cut little cubes will just slide right off!
Easy Mango Salsa Ingredients:
- 2 Mangoes
- 1 large red bell pepper or 2 small-medium ones
- 2 jalapenos
- Juice of two small limes
- Juice of one medium lemon
- A generous handful of cilantro
Cut up your mango and peppers and mix it all up. That’s it. You’re done. Grab some chips and get eating!
